Only unusual ingredient was nutritional yeast. This gives it the "cheesy" flavor.
Next time I will roast 2 ears of corn (& cut the kernels off) and put them into the soup. That was all the was missing in my opinion.

While my beautiful daughter, Megan, is in California for a few weeks, I am going vegan (as is my other beautiful daughter Brittany). Why on earth would you do that you ask??? Are you crazy??
Well...we are hopefully & prayerfully believing God is going to heal her from her 5 years of daily migraine headaches while she is in a modern day Jane Austen spa/sanitarium illness treatment center (ha). Try to say that fast!
IF she is healed, she will most likely become a vegan to maintain her health. So while she is away I will be testing as many vegan recipes for her as I can. I bought a book by a vegan food truck chef. I figure that if people are actually buying his food, it must be good.
So I have made my first grocery list. And it will be like going on a treasure hunt to find all of these new ingredients. I figure I will try Trader Joes to begin with.
