This is all for you Megan!


While my beautiful daughter, Megan, is in California for a few weeks, I am going vegan (as is my other beautiful daughter Brittany). Why on earth would you do that you ask??? Are you crazy??


Well...we are hopefully & prayerfully believing God is going to heal her from her 5 years of daily migraine headaches while she is in a modern day Jane Austen spa/sanitarium illness treatment center (ha). Try to say that fast!


IF she is healed, she will most likely become a vegan to maintain her health. So while she is away I will be testing as many vegan recipes for her as I can. I bought a book by a vegan food truck chef. I figure that if people are actually buying his food, it must be good.


So I have made my first grocery list. And it will be like going on a treasure hunt to find all of these new ingredients. I figure I will try Trader Joes to begin with.

Fried Dandelion Greens

My first official vegan meal.


My treasure hunt for ingredients took me to Trader Joe's & Earth Fare. And I never found umeboshi plum vinegar. So I just used red wine vinegar instead.



Other odd ingredients: white miso paste, dandelion greens, & brown mustard seeds.

The most fun part of this recipe...put brown mustard seeds in hot oil and wait for them to pop!! It was like popcorn or like little bullets trying to get you!

My overall rating is a 3 out of 5. It was soooooo flavorful with 7 cloves of garlic, a jalepeno, and red pepper flakes. I would make it again except use kale instead of the dandelion greens. They were a little too bitter for me. I hate to say but it would have been great with a good little steak :)
The cookbook says it is a good savory side for the blue cornmeal pancakes that I am making tomorrow. So we will see about that. I ate it just by itself and it needed something else because the flavors were intense. Maybe a good piece of toasted vegan bread.
